Soup's On

I learned something this past weekend. The old adage, “if a little is good a lot must be better” does not apply to lemon juice.

Earlier in January, Rhodent posted a recipe for Chicken Lemon Soup. I made it this past weekend. I followed her directions - no ready-made broth and used fresh squeezed lemon juice. For vegetables a few carrots, some celery, an onion, and mushrooms were added. Since I never had this soup before I wasn’t sure how it should taste.

I overdosed on the lemon juice. I used six large lemons. The biggest, juiciest lemons I could fine. I made sure each one was squeezed a couple of times to get all the juice possible. I ended up with a little over a cup of lemon juice out of those badboys. Then I dumped it all in and let it simmer for a few minutes.

That first bite really caught me off guard. I sat there all puckered up. It had quite a tang to it. I ate the first bowl not knowing if I liked it or not. I went back and read the recipe again. Nowhere did Rhodent talk about using the biggest lemons possible. She did say, “You may need to adjust the amount of lemon juice to your own taste.”

I diluted it down with a little more stock and tried a second bowl. It was better. Next time I might start with three medium lemons and work up from there.

Give it a try. Just remember - you may need to adjust the amount of lemon juice to your own taste.

Ha! Ha! Too bad no one had a picture to capture that pucker moment!!

BTW, I would like to tell Rhodent that I can no longer get her site up because when I do this little block appears that says "Windows will now smash your c/drive with a hammer." It has a picture of a hammer and you can choose "OK" or "Details", however it will not allow you to click on "details." I wasn't about to click on that "OK" part. I called my computer guy not realizing it was only on her site. He came, he cleaned my computer up, he left. I got on and as soon as I got on her site there it was again. He told me to exit her site and not go back there. He had never heard tell of that before. Has anyone else??

(I hope Rhodent sees this. My computer guy thinks something is wrong with her site since it only appears on hers. Maybe the rhodents have taken over?? AND THANK YOU IN ADVANCE RALPH FOR LETTING ME SAY THIS IN HOPES SHE SEES IT!)

I had no idea you used six lemons!!!! Had you only humbled yourself and asked I could have to you that was way too many. The soup has potential and I know you will (as you always do) work at getting it perfected! Keep cooking!

I got the answer about the computer thing from Cliff.

Seems she is now having computer problems. What a pain that is! I'm glad it wasn't my computer though!

Ralph, I hope you have un-puckered by now!! Be a shame to have to go to work like that! Ha!

As I'm reading this post, I am trying to enjoy a salad with lemon juice as dressing. I literally was all puckered up as I was reading this. I'm working to shed some weight, so delicious, high calorie dressings are being shunned. I sure do miss those high calorie dressings!
That soup sounds yummy. Almost anything sounds yummy to me right now!

Ok, so this reminds me of a mistake with lemons I've also made. Except it was with green beans.

So I won't delve into it here, but Ralph, I feel your pain. At least you didn't have 6 people sitting around just ready to ridicule you and your new, tangy dish! :)

Occasionally we are a bit more alike than I would care to admit.
